The fifth coffee in our Microlot Project comes from third generation Colombian farmer Jairo Arcila, who some of you may know from our Rare Range of coffees.   Jairo works with his sons to produce high quality specialty coffees at their farm, Santa Mónica. This Pink Bourbon lot undergoes an extensive processing protocol, with peaches added to impart their distinct stone fruit flavours and wine yeast used to enhance the fermentation process, adding complexity and depth."
