Root and Branch - "Process: Anaerobic Fermentation Notes: Blackberry Jam, Violet, Tropical Fruit August takes us to the foothills of Uganda's Rwenzori Mountains—known as the "Mountains of the Moon"—where volcanic soils, high elevations and a unique microclimate produce coffees with remarkable sweetness, vibrant acidity and expressive fruit character. This lot undergoes Agri Evolve's signature extended fermentation process. Freshly harvested cherries are sealed in 145kg barrels for four days before being transferred to raised drying beds, where they're turned regularly to ensure slow, even drying."
