Casa Coffee Roasters - "The Coffee We are absolutely chuffed to introduce our second co-fermented coffee from producer Edinson Argote’s farm, Quebraditas. This brilliant process kicks off by selecting 90% ripe cherries, followed by a quick float in water to skim off any green, overripe, and dry coffee cherries. The cherries oxidise for 12 hours in drums before being dry pulped. Next, a proper two-part fermentation begins: 24 hours in open tanks to clear the mucilage, then 72 hours below 25°C infused with lemon, lime, and selected yeast. After a thorough wash, the coffee is mechanically dried for 42 hours at 38°C. Finally, it settles in GrainPro bags to lock in that spectacular flavour."
