
Watch House - "This lot comes from Faustino Flores in El Diamante, Cajamarca, part of a multi-generational coffee family behind Finca El Morito. While the farm is known for traditional varieties, recent years have focused on newer plantings like Marshell, combining family experience with a more experimental approach to cultivation. Marshell is a rare Catimor-derived varietal, selected for both cup quality and resilience. Cherries are selectively harvested, fermented anaerobically for 72 hours, then dried slowly over 30 days in solar dryers."
