This lot comes from Jamison Savage’s Partner Producer Program in Chiriquí, where carbonic maceration has been refined over several years. Drawing from techniques used in winemaking, the focus is on controlled fermentation to shape flavour while preserving the clarity expected of high-elevation Gesha."
