Grown on the slopes of Santa Bárbara Mountain, the farms benefit from a unique microclimate that produces a consistent and expressive cup year after year. After handpicking at peak ripeness, cherries are de-pulped, dry fermented for around 20 hours, washed, and dried for 10–14 days on patios or solar dryers."
