
Foundry Coffee roasters - "'Is it the Ombligon, or is it the yeast? A question I never thought I'd be asking.' Very occasionally, a coffee comes along and completely knocks us for six. This is one of those. Initially it's all just a little hard to compute. Ombligon is a rare varietal. Highly sought after and named after the Spanish for belly button due to the shape of the coffee cherries. It's known for sweetness and fruity, complex flavours. But then this lot has also had some yeast added to the ferment, which encourages different microbes to grow during the fermentation period. Remember those foam banana sweets you had as a kid? ...and those fruit salad chews? This tastes a bit like those."
